April 2023 Honorable Mention Recipe

Foodies, fanatics, friends and family,

Our recipe contest's honorable mention winner for April is full of colorful, multicultural and many-layered delicious flavors!

Submitted by Chef Lynn Albright, her description, word-for-word hits the bulls-eye:

“Move over avocado toast! There’s a tomato in town! And boy does Bella Sun Luci shine in a co-starring role with bacon. This is going to become a brunch-time favorite – love that most of the elements can be prepared in advance – including the poached eggs – and quickly assembled when guests are in the house”.

In fact, about brunch, this is an, again delicious and exotic modern take on Eggs Benedict, with a saffron aioli instead of the traditional hollandaise, and of course our sun dried tomatoes.

Other descriptors are: harissa (a Moroccan bell pepper sauce), paprika, brown sugar, saffron, arugala, feta, basil and lemon zest. YUM!!!

Two more things: Chef Lynn’s technique for poaching the eggs is GENIUS; and, contrary to her opening statement, I know that avocado would be great on top!
