June 2020 Honorable Mention - Seared Sea Scallops atop Humus with Corn Relish

This is the last Honorable Mention recipe I'm cooking for this year's contest. The next contest's deadline is July 1st so if you're reading this after 7/1/20, I'm afraid you'll have to wait until 2021 for us to consider your recipe.

I waited until now to cook home chef Mary Edwards's Sea Scallops atop Humus with Corn Relish because it's a summer dish. Fresh corn cut off the cob and the bell pepper are coming in strong at this time of year.

The three step composition of this recipe brings a variety of flavors, colors and textures to the table. Smooth humus, crunchy corn and veggies, luscious and velvety scallops with an undercutting of lemony sunshine make this dish one of the best of the year. In fact, I'm not sure why it wasn't a top 3 finalist. This recipe contest helps make my job super fun here at Bella Sun Luci and I'm grateful to all of you contestants for the creativity you bring to my kitchen. It's a pleasure working with you.
