Ingredients

  • 1 quart heavy cream 
  • 16 oz sharp cheddar cheese
  • 16 oz macaroni noodles
  • 1 3 oz bag Bella Sun Luci Sun Dried Tomatoes Julienne Cut with Zesty Pepper 
  • ½ cup parmesan cheese 
  • ½ cup all-purpose flour 
  • 1 cup Italian bread crumbs 
  • 2 large eggs
  • Salt and pepper

Directions

  1. Preheat oven to 400 degrees. 
  2. Cook macaroni noodles according to box instructions. 
  3. In a large pot over medium heat, bring whipping cream to a simmer. 
  4. Stir in cheddar cheese until it melts into the cream. 
  5. Then mix in the sun-dried tomatoes. 
  6. Season with salt and pepper to taste. 
  7. Add drained macaroni to the cream mixture.
  8. Scoop the macaroni into small piles on a baking sheet with parchment paper. 
  9. Place the baking sheet in the freezer for 15 to 20 minutes.
  10. Remove from the freezer and form the macaroni and cheese piles into balls. 
  11. In three separate bowls, add flour, eggs, and Italian bread crumbs. 
  12. Place each macaroni ball in the bowl with flour. 
  13. Once the macaroni ball is coated in flour, place it in a bowl with mixed eggs. 
  14. Finally, coat the ball with bread crumbs. 
  15. Evenly place each ball on a baking sheet. 
  16. Put the baking sheet in the oven for 15-20 minutes. 
  17. Remove from the oven and garnish with basil. Enjoy!
