Ingredients

  • ½ pound lean ground beef
  • ½ pound ground Italian sausage 
  • salt and ground black pepper, to taste 
  • 1 yellow onion, chopped 
  • 1 tablespoon Bella Sun Luci Olive Oil 
  • 3 cloves garlic, minced 
  • 2 tablespoons tomato paste 
  • 25 oz jar Bella Sun Luci Tomato & Artichoke Pasta Sauce 
  • ½ teaspoon red pepper flakes 
  • 2 tablespoons fresh parsley, chopped (or 2 tsp dried)
  • ½ teaspoon dried oregano leaves
  • 1 teaspoon dried basil 
  • 7 cups low-sodium chicken broth (or vegetable broth)
  • 9 lasagna noodles, broken into pieces 
  • 2 cups fresh spinach leaves (optional) 
  • 10 ounces ricotta cheese (or cottage cheese) 
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated parmesan cheese 
  • Fresh basil, for serving 

Directions

  1. In a large pot over medium heat, fully cook ground beef and sausage. 
  2. Season with salt and pepper.
  3. Drain grease and place cooked ground beef and sausage aside in a bowl. 
  4. in your large pot, heat olive oil over medium heat and stir in chopped onion. 
  5. After 3-5 minutes, add minced garlic and cook for another 2 minutes. 
  6. Stir in tomato paste, marinara sauce, spices and broth. 
  7. Return meat to the pot. 
  8. Bring to a boil. Then add lasagna noodles, broken into 4ths. 
  9. Reduce heat to medium-low and cook, stirring occasionally until the noodles are tender. 
  10. Add Spinach. 
  11. In a small bowl, mix mozzarella, parmesan, and ricotta cheese. 
  12. Serve the soup with a dollop of your cheese mixture on top. 
  13. Garnish with fresh basil (optional).
