Ingredients

 Sun Dried Tomato Tzatziki Sauce

  • ¾ c plain Greek yogurt (preferably with 5% milk fat)
  • 6 tbsp Bella Sun Luci Sun Dried Tomatoes with Zesty Peppers Julienne-Cut (from 3oz bag)
  • ½ c grated seedless English cucumber, patted dry of excess moisture
  • 1 tbsp chopped fresh dill
  • 1 medium garlic clove, minced
  • 2 tsp fresh lemon juice
  • 1 tsp freshly-grated lemon zest
  • 2 tsp Bella Sun Luci Extra Virgin Olive Oil
  • 1 tsp crumbled feta cheese (preferably very small crumbles)
  • ¼ tsp fine sea salt

Burger Patty

  • 16 ounces fresh ground pork
  • 1 ½ tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper
  • 2 tsp freshly-grated lemon zest
  • ¼ c Bella Sun Luci Julienne Cut Sun Dried Tomatoes with Italian Herbs, plus 2 tablespoons oil from jar
  • 6 tbsp crumbled feta cheese
  • ¼ c Bella Sun Luci Extra Virgin Olive Oil
  • 4 soft white hamburger buns, split
  • 4 green leaf lettuce leaves
  • 32 very thin slices seedless English cucumber
  • 12 thinly-sliced rings of red onion
  • 4 wedges of lemon (optional)

Directions

  1. In small bowl, combine yogurt, sun dried tomatoes, cucumber, dill, garlic, lemon juice, lemon zest, olive oil, feta cheese, and salt. Cover and refrigerate until ready to use.
  2. In medium bowl, combine pork, oregano, salt, pepper, sun dried tomatoes, and oil from sun dried tomato jar. Divide into 4 equal portions. Begin to form each portion into a patty, then spoon 1 ½ tablespoons feta cheese in the middle, and cover with pork mixture so feta is enclosed inside each burger patty. 
  3. Pour olive oil into shallow bowl. Dip each side of burger patty in olive oil.
  4. Heat large nonstick skillet over medium heat. Place oil-coated burger patties into hot skillet. Cook about 5-6 minutes on each side, or until pork is just cooked through. Remove burgers to plate.
  5. To assemble burgers, place one lettuce leaf on each bottom bun. Arrange 4 cucumber slices over lettuce. Spoon about 2 tablespoons sun dried tomato tzatziki sauce over cucumbers. Top with feta-stuffed burgers. Top each burger with 3 rings of red onion. Spoon 1 tablespoon sun dried tomato tzatziki sauce inside the red onion rings. Top each burger with 4 more cucumber slices. Close burgers with top buns. Serve each burger with a wedge of lemon for squeezing over each zesty burger bite (optional). Serve immediately.
