Balsamic Harvest Salad

The quintessential holiday salad has bright flavors from seasonal persimmons and sweet dried craisins.

Balsamic Vinaigrette with Sweet and Fragrant Aged Balsamic Vinegar
Ingredients
- 2 handfuls spring mix
- 1 handful baby leaf spinach
- 1 large green apple
- 1 large fuyu persimmon
- 1 tbsp pomegranate seeds
- ¼ c Gorgonzola, crumbled
- 2 tbsp candied pecans
- 2 tbsp pumpkin seeds
- 2 tbsp dried cranberries

Directions
- Place spring mix and spinach in a medium sized bowl and toss to combine.
- Prepare the apple and persimmon by slicing into thin wedges, then layer the cut wedges around the bed of greens.
- Next, garnish the greens and fruit wedge mix with pomegranate seeds, Gorgonzola, pecans, pumpkin seeds, and cranberries.
- To finish, drizzle on the Balsamic Vinaigrette to dress the salad.
