Sun Dried Tomato Zucchini Rolls
Overview
These baked zucchini rolls with feta and sun dried tomatoes are a great appetizer or side dish. The slight crispness of the baked zucchini combined with the creamy feta and savory sun-dried tomatoes creates a wonderful Mediterranean-inspired treat!

Ingredients
- Small blocks of Feta
- Zucchini
- Bella Sun Luci Sun Dried Tomato Halves in Premium Oil
- Rosemary springs
- Salt and pepper to taste
Directions
- Preheat the Oven: Preheat your oven to 400°F
- Using a vegetable peeler, slice the zucchini lengthwise into thin strips.
- Lay the zucchini slices flat on a baking sheet lined with parchment paper.
- Lightly coat each slice with olive oil and sprinkle with a pinch of salt and pepper.
- Bake in the preheated oven for 5-10 minutes, just until the zucchini becomes slightly tender (don't let it get too soft).
- Remove the zucchini from the oven and let it cool slightly.
- Roll each slice of zucchini around a small block of feta.
- Drain and reserve oil from sun dried tomatoes. Place a sun dried tomato atop the zucchini rolled feta cube.
- Secure the sun dried tomato with a rosemary sprig.
