These baked zucchini rolls with feta and sun dried tomatoes are a great appetizer or side dish. The slight crispness of the baked zucchini combined with the creamy feta and savory sun-dried tomatoes creates a wonderful Mediterranean-inspired treat!

Ingredients

  • Small blocks of Feta
  • Zucchini 
  • Bella Sun Luci Sun Dried Tomato Halves in Premium Oil
  • Rosemary springs 
  • Salt and pepper to taste

Directions

  1. Preheat the Oven: Preheat your oven to 400°F
  2. Using a vegetable peeler, slice the zucchini lengthwise into thin strips.
  3. Lay the zucchini slices flat on a baking sheet lined with parchment paper.
  4. Lightly coat each slice with olive oil and sprinkle with a pinch of salt and pepper.
  5. Bake in the preheated oven for 5-10 minutes, just until the zucchini becomes slightly tender (don't let it get too soft).
  6. Remove the zucchini from the oven and let it cool slightly.
  7. Roll each slice of zucchini around a small block of feta. 
  8. Drain and reserve oil from sun dried tomatoes. Place a sun dried tomato atop the zucchini rolled feta cube. 
  9. Secure the sun dried tomato with a rosemary sprig.
