Mediterranean Tomato & Pepper Hummus

Overview

This is a super-quick, easy, nutrition-rich and amazingly flavorful recipe. Our Tomato & Pepper Sauce Starter gives hummus a new, stellar, zesty personality. Try our Tuscan Garden and Tomato & Basil Sauce Starters too, in this Bella Sun Luci Test Kitchen daily favorite appetizer. Serve it in a bowl, on a raw vegetable and pita bread platter. Ingredients

  • 2 15 oz cans garbanzo beans, drained, ½ cup of the liquid reserved aside. If you use dry beans that you cook, use 3 ½ cups.
  • 2 tbsp tahini
  • 1 8 oz pouch (1 cup) Bella Sun Luci Tomato & Pepper Sauce Starter, plus 1 to 2 Tablespoons extra for garnish, set aside
  • ½ cup Bella Sun Luci or other high quality extra virgin olive oil
  • 2 large garlic cloves
  • ½ cup parsley
  • 6 large leaves basil
  • Juice of ½ lemon
  • 1 ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ⅛ tsp cayenne (optional)
  • *The ½ cup garbanzo bean liquid you reserved
  • Extra Parsley and basil for garnish

Directions

  1. Place all of the ingredients, except the additional 2 Tablespoons Sauce Starter mentioned above, into a food processor.
  2. *If you use a blender, you’ll probably need ½ - 1 cup more of the liquid from the beans to make the hummus smooth.
  3. Blend until smooth.
  4. Transfer to a serving bowl and garnish with the additional Sauce Starter and herbs.
