Mediterranean Tomato & Pepper Hummus
Overview
This is a super-quick, easy, nutrition-rich and amazingly flavorful recipe. Our Tomato & Pepper Sauce Starter gives hummus a new, stellar, zesty personality. Try our Tuscan Garden and Tomato & Basil Sauce Starters too, in this Bella Sun Luci Test Kitchen daily favorite appetizer. Serve it in a bowl, on a raw vegetable and pita bread platter. Also great as a spread in wraps and on sandwiches! Buon appetito!

Tomato & Pepper Sauce Starter
Ingredients
- 2 15 oz cans garbanzo beans, drained, ½ cup of the liquid reserved aside. If you use dry beans that you cook, use 3 ½ cups.
- 2 tbsp tahini
- 1 8 oz pouch (1 cup) Bella Sun Luci Tomato & Pepper Sauce Starter, plus 1 to 2 Tablespoons extra for garnish, set aside
- ½ cup Bella Sun Luci or other high quality extra virgin olive oil
- 2 large garlic cloves
- ½ cup parsley
- 6 large leaves basil
- Juice of ½ lemon
- 1 ½ tsp salt
- ½ tsp freshly ground black pepper
- ⅛ tsp cayenne (optional)
- *The ½ cup garbanzo bean liquid you reserved
- Extra Parsley and basil for garnish
Directions
- Place all of the ingredients, except the additional 2 Tablespoons Sauce Starter mentioned above, into a food processor.
- *If you use a blender, you’ll probably need ½ - 1 cup more of the liquid from the beans to make the hummus smooth.
- Blend until smooth.
- Transfer to a serving bowl and garnish with the additional Sauce Starter and herbs.
