Ingredients

  • 1 lb shrimp, peeled 
  • 1 jar Bella Sun Luci Julienne Cut Sun Dried Tomatoes
  • 2 tablespoons Bella Sun Luci sun dried tomato olive oil (from jar) 
  • 4 cloves garlic, minced 
  • ¼ teaspoon red pepper flakes 
  • ½ cup dry white wine 
  • Juice of 1 lemon 
  • Zest of 1 lemon 
  • 3 tablespoons unsalted butter 
  • Salt & pepper to taste 
  • ¼ cup parsley, chopped 
  • ½ lb angel hair pasta 
  • Freshly grated parmesan 

Directions

  1. In a large pot, boil water. 
  2. Add and cook pasta for the time listed on the box. 
  3. Keep ½ a cup of pasta water, then drain 
  4. In a large skillet, over medium heat, heat 1 teaspoon of the sun dried tomato olive oil. 
  5. Add shrimp and season with salt and pepper.
  6. Cook for 1-2 minutes per side until fully cooked and then remove. 
  7. In the same skillet, add the remaining teaspoon of olive oil. 
  8. Add garlic and red pepper flakes and sauté until fragrant. 
  9. Add Bella Sun Luci Sun Dried Tomatoes. 
  10. Pour in white wine and simmer for 2-3 minutes. 
  11. Stir in lemon juice, lemon zest, and butter. 
  12. Once the butter is melted, add the shrimp back to the skillet. 
  13. Add cooked pasta and a splash of pasta water and mix everything. 
  14. Sprinkle parsley and parmesan on top. 
  15. Enjoy!
