Champagne Peach Summer Salad

  • 7 oz Spring Mix Lettuce, washed and torn into bite-sized pieces
  • 1 fresh peach, sliced
  • ½ cucumber, peeled and sliced
  • 1 ball of Burrata cheese, torn into pieces
  • 4 slices of Prosciutto, torn into bite-sized pieces
  • ½ c cherries, halved and pitted
  • ½ c pistachios, roughly chopped
  • Fresh Basil, chiffonade (thinly sliced)
  • ¼ c Bella Sun Luci 100% Olive Oil Champagne Salad Vinaigrette


  1. Wash and tear the spring mix Lettuce into bite-sized pieces.
  2.  Slice the fresh peaches and cucumbers.
  3.  Tear the Burrata cheese and Prosciutto into smaller pieces.
  4.  Halve and pit the cherries.
  5.  Roughly chop the pistachios.
  6.  Chiffonade the fresh basil by stacking the leaves, rolling them tightly, and slicing thinly.
  7.  In a large salad bowl, combine sliced peaches, sliced cucumbers, torn Burrata cheese, torn Prosciutto, halved cherries, and chopped pistachios over the little gem salad bed.
  8.  Sprinkle the chiffonade fresh basil over the salad.
  9.  Pour the Champagne Vinaigrette over the salad according to your taste preference. Start with a few tablespoons and adjust to your liking.
  10.  Gently toss the salad ingredients together until everything is evenly coated with the vinaigrette.
  11.  Transfer the salad to serving plates or bowls.
  12.  Serve immediately and enjoy your delicious
