Ingredients

  • 1 lb shrimp off shrimp, peeled and raw
  • 2 tbsp freshly minced garlic
  • ¼ c chopped fresh parsley
  • 1 English cucumber
  • 1 8.5oz Bella Sun Luci Sun Dried Julienne Cut Tomatoes in Premium Oil
  • 1 c red onion, finely diced
  • 1 c kalamata sliced olives
  • ½ c Bella Sun Luci Meyer Lemon Vinaigrette
  • Salt and Pepper

Directions

  1. Pour ½ cup of Meyer Lemon vinaigrette over the shrimp and marinate for 30 minutes.
  2. Preheat a sauté pan over medium heat. Add the marinated shrimp, a pinch of salt, pepper, and garlic. Cook until the shrimp are thoroughly done—this will be a quick process.
  3. Transfer the shrimp to a plate and let them cool to room temperature.
  4. Once cooled, place the shrimp in a medium-sized bowl and stir in the cucumber to coat.
  5. Add the red onion, olives, sun dried tomatoes, and parsley to the bowl.
  6. Drizzle the remaining Meyer Lemon vinaigrette over the mixture and toss to coat evenly.
