Meyer Lemon Vinaigrette with Basil and Honey

Ingredients
- 1 lb shrimp off shrimp, peeled and raw
- 2 tbsp freshly minced garlic
- ¼ c chopped fresh parsley
- 1 English cucumber
- 1 8.5oz Bella Sun Luci Sun Dried Julienne Cut Tomatoes in Premium Oil
- 1 c red onion, finely diced
- 1 c kalamata sliced olives
- ½ c Bella Sun Luci Meyer Lemon Vinaigrette
- Salt and Pepper
Directions
- Pour ½ cup of Meyer Lemon vinaigrette over the shrimp and marinate for 30 minutes.
- Preheat a sauté pan over medium heat. Add the marinated shrimp, a pinch of salt, pepper, and garlic. Cook until the shrimp are thoroughly done—this will be a quick process.
- Transfer the shrimp to a plate and let them cool to room temperature.
- Once cooled, place the shrimp in a medium-sized bowl and stir in the cucumber to coat.
- Add the red onion, olives, sun dried tomatoes, and parsley to the bowl.
- Drizzle the remaining Meyer Lemon vinaigrette over the mixture and toss to coat evenly.
