These Mini Caprese Burger Skewers combine the best of Italian and American cuisine in one bite-sized appetizer. Juicy grilled beef patties are paired with fresh mozzarella, sweet sun dried tomatoes, crisp butter lettuce, and fragrant basil, all stacked on a toasted mini bun. Drizzled with a touch of sun dried tomato infused olive oil, these skewers are a perfect blend of savory and fresh flavors, making them an perfect summer appetizer for your next outdoor gathering.

Ingredients
- 12 mini burger buns, halved and lightly toasted
- 12 small butter lettuce leaves
- 2 lbs of ground beef (formed into 2" patties)
- 12 slices of fresh mozzarella (cut to match the size of the patties)
- 1 cup slice red onion
- 12 Bella Sun Luci sun-dried tomatoes, drained (reserve the oil for future use)
- 12 fresh basil leaves
- ¼ cup Bella Sun Luci Tuscan Rub
- 1 tsp salt
- Balsamic glaze (optional)
- 12 decorative skewers
- Favorite condiment (ketchup, mayonnaise, mustard etc.)
Directions
Prepare the Patties:
- Preheat your grill or barbecue to medium-high heat.
- Season the mini beef patties with Bella Sun Luci Tuscan Rub and salt.
- Grill the patties for about 2-3 minutes per side, or until they reach your desired level of doneness.
- Place a slice of fresh mozzarella on the patty and allow it to slightly melt, then set patties aside.
Toast the Buns:
- Lightly toast the mini burger bun halves on the grill or in a pan until they are golden brown and slightly crispy.
Assemble the Skewers:
- Start by placing a toasted mini burger bun on a skewer.
- Spread your favorite condiment on bun.
- Add a butter lettuce leaf.
- Place a grilled mini beef patty on top of the lettuce.
- Add a slice of red onion.
- Top with a sun dried tomato.
- Finish with a fresh basil leaf.
Drizzle and Serve:
- Drizzle the assembled skewers with the reserved olive oil from the sun-dried tomatoes to enhance the flavors, and optional aged balsamic glaze.
