  • 1 - 11.5 oz. can diced tomatoes 
  • 1 bag Bella Sun Luci Zesty Pepper Sun Dried Tomatoes
  • 1 cup yellow onion, chopped
  • 1 cup carrots
  • 2 ribs celery 
  • 2 cloves garlic, chopped
  • 2 - 16 oz. cans garbanzo beans, drained
  • 1 tsp. salt
  • 1 tsp. Pepper
  • 1 Tbsp. balsamic vinegar
  • 4 cups chicken stock
  • 1 - 6 oz. bag baby spinach
  • ¼ cup basil

Directions

  • Simmer diced tomatoes and Bella Sun Luci Zesty Pepper Sun Dried Tomatoes in a small sauce pan. 
  • Remove tomato mixture and mix in a food processor. Set aside.
  • In a large pan, simmer chicken stock. 
  • Add onion, carrot, celery, garbanzo beans, garlic, and balsamic vinegar. 
  • Add in the reserved tomato mixture. 
  • Add spinach and basil, stir and let simmer. 
  • Season with salt and pepper.
  • Optional: Plate over wild rice.
