- 1 - 11.5 oz. can diced tomatoes
- 1 bag Bella Sun Luci Zesty Pepper Sun Dried Tomatoes
- 1 cup yellow onion, chopped
- 1 cup carrots
- 2 ribs celery
- 2 cloves garlic, chopped
- 2 - 16 oz. cans garbanzo beans, drained
- 1 tsp. salt
- 1 tsp. Pepper
- 1 Tbsp. balsamic vinegar
- 4 cups chicken stock
- 1 - 6 oz. bag baby spinach
- ¼ cup basil

Directions
- Simmer diced tomatoes and Bella Sun Luci Zesty Pepper Sun Dried Tomatoes in a small sauce pan.
- Remove tomato mixture and mix in a food processor. Set aside.
- In a large pan, simmer chicken stock.
- Add onion, carrot, celery, garbanzo beans, garlic, and balsamic vinegar.
- Add in the reserved tomato mixture.
- Add spinach and basil, stir and let simmer.
- Season with salt and pepper.
- Optional: Plate over wild rice.
