Mini Sun Dried Tomato Grilled Cheese Sandwiches


These mini grilled cheeses feature the rich and creamy Brie, the savory prosciutto, and our flavorful Bella Sun Luci Sun Dried Tomato Bruschetta, all nestled between slices of French sourdough baguette. They make for a sophisticated and delicious appetizer for any gathering or as a weeknight meal. Pair with our creamy sun dried tomato soup for the full comfort food meal!

  • 1 French sourdough baguette
  • 1 wheel of Brie cheese, thinly sliced
  • 10 slices of prosciutto
  • 1 c Bella Sun Luci Sun-Dried Tomato Bruschetta
  • Fresh thyme or basil for garnish


  1. Heat a non-stick skillet or griddle over medium heat. 
  2. Slice the French sourdough baguette into 1/2-inch thick rounds.
  3. On one side of a baguette round, place a slice of Brie cheese.
  4. Top the Brie with a slice of prosciutto.
  5. Spoon a small amount of Sun Dried Tomato Bruschetta on top of the prosciutto.
  6. Place another slice of Brie on top to sandwich the ingredients.
  7. Place the assembled mini grilled cheese on the preheated skillet or griddle.
  8. Grill for about 2-3 minutes on each side or until the bread is golden brown and the Brie is melted.
  9. Repeat the process for the remaining baguette rounds and ingredients.
  10. Once all the mini grilled cheeses are cooked, arrange them on a serving platter.
  11. Garnish with fresh herbs like basil or thyme if desired.
  12. Serve the mini grilled cheeses warm along side a bowl of hot soup.
