Ingredients

  • 1 tbsp olive oil
  • 1 large yellow onion, finely diced
  • 1 shallot, minced
  • 8 cloves garlic, minced
  • 2 carrots, peeled and finely diced
  • 6 celery stalks, finely diced
  • ½ lb Mexican chorizo
  • ½ lb ground beef
  • ¼ cup red wine
  • 1/2 cup Bella Sun Luci Chipotle Sun-Dried Tomatoes, finely chopped
  • 1 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • ½ tsp dried basil or 6–8 fresh leaves
  • Salt and pepper, to taste
  • 1–2 tsp lime juice (to brighten)
  • Grated Parmesan, for garnish
  • Cooked pasta, for serving
  • 1 tbsp butter and pasta water (optional, for finishing)

Directions

  1. In a large pan, heat olive oil over medium. Add onion, shallot, garlic, carrots, and celery. Cook until softened and fragrant, 8–10 minutes.
  2. Add chorizo and ground beef. Cook until browned and crumbly. Drain excess fat if needed.
  3. Deglaze with red wine, scraping up any browned bits. Stir in Bella Sun Luci Chipotle Sun-Dried Tomatoes, tomato paste, and crushed tomatoes. Add basil, then season with salt and pepper.
  4. Lower the heat and let the sauce simmer gently for 20–30 minutes, stirring occasionally to develop the flavors.
  5. Add lime juice for brightness. For extra richness, stir in a pat of butter and a splash of pasta water before serving.
  6. Toss with cooked pasta and finish with grated Parmesan and fresh basil.
