This rich, slow-simmered ragù brings together Mexican chorizo, ground beef, aromatics, red wine, crushed tomatoes, and Bella Sun Luci Chipotle Sun-Dried Tomatoes for a bold, savory sauce with gentle heat and depth. The finely diced onion, shallot, carrot, celery, and garlic create a classic flavor base, while the chipotle sun-dried tomatoes add smoky complexity and concentrated tomato flavor.
Finished with a touch of lime for brightness, this sauce is hearty without feeling heavy and pairs beautifully with wide pasta such as pappardelle, tagliatelle, or rigatoni. Ingredients
- 1 tbsp olive oil
- 1 large yellow onion, finely diced
- 1 shallot, minced
- 8 cloves garlic, minced
- 2 carrots, peeled and finely diced
- 6 celery stalks, finely diced
- ½ lb Mexican chorizo
- ½ lb ground beef
- ¼ cup red wine
- 1/2 cup Bella Sun Luci Chipotle Sun-Dried Tomatoes, finely chopped
- 1 tbsp tomato paste
- 1 (28 oz) can crushed tomatoes
- ½ tsp dried basil or 6–8 fresh leaves
- Salt and pepper, to taste
- 1–2 tsp lime juice (to brighten)
- Grated Parmesan, for garnish
- Cooked pasta, for serving
- 1 tbsp butter and pasta water (optional, for finishing)
Directions
- In a large pan, heat olive oil over medium. Add onion, shallot, garlic, carrots, and celery. Cook until softened and fragrant, 8–10 minutes.
- Add chorizo and ground beef. Cook until browned and crumbly. Drain excess fat if needed.
- Deglaze with red wine, scraping up any browned bits. Stir in Bella Sun Luci Chipotle Sun-Dried Tomatoes, tomato paste, and crushed tomatoes. Add basil, then season with salt and pepper.
- Lower the heat and let the sauce simmer gently for 20–30 minutes, stirring occasionally to develop the flavors.
- Add lime juice for brightness. For extra richness, stir in a pat of butter and a splash of pasta water before serving.
- Toss with cooked pasta and finish with grated Parmesan and fresh basil.
