Ingredients

  • 1 lb large shrimp (can substitute salmon or chicken) 
  • Bella Sun Luci Sun Dried Tomato Tucson Rub 
  • Bella Sun Luci Julienne Cut Sun Dried Tomatoes in Premium Olive Oil with Italian Herbs 
  • Bella Sun Luci California Estate Extra Virgin Olive Oil 
  • Bella Sun Luci Meyer Lemon Vinaigrette with Basil and Honey 
  • 1 English cucumber 
  • 1 small bunch of Thai basil 
  • 1 small bunch of mint 
  • 1 small bunch purple perilla leaves (if available) 
  • 1 romaine heart
  • A package of rice paper spring roll wrappers 

Directions

  1. Clean shrimp (shell, devein, remove head and tail, rinse in cold water and pat dry with a paper towel).
  2. In a large saucepan, drizzle Bella Sun Luci California Estate Extra Virgin Olive Oil
  3. Add and season the shrimp with a coating of Bella Sun Luci Sun Dried Tomato Tuscan Rub in the saucepan. 
  4. In a small saucepan, warm up the Bella Sun Luci Julienne Cut Sun Dried Tomatoes in Premium Oil with Italian Herbs to bring their flavor 
  5. Clean and cut the English cucumber, Thai, basil, mint, purple perilla, and romaine heart. Cut small enough to fit inside a rice paper spring roll wrapper.
  6. Now it is time to assemble the rolls!
  7. Lightly dip the entire spring roll wrapper in water and then place it on a plate. 
  8. Add a romaine heart lettuce leaf in the middle as the base. 
  9. On top, add the cucumber and then the herbs. 
  10. Next, add the Bella Sun Luci Sun Dried Tomatoes.
  11. Finally, add three shrimps. 
  12. Wrap each roll by folding in the left and right sides and then roll it up vertically 
  13. When serving, dip the rolls in Bella Sun Luci Meyer Lemon Vinaigrette with Basil and Honey
