Ingredients
Chicken
- 4 chicken breasts
- Salt & pepper
- Flour (for dredging)
- 3 eggs, beaten
- Panko breadcrumbs
- 3 tbsp olive oil (for pan-frying)
Orange Gremolata
- 1 tbsp garlic, minced
- 1 tbsp Italian parsley, finely chopped
- 1 tbsp orange zest
- ¼ tsp salt
California Orange Pepper Sauce
- ½ cup Bella Sun Luci California Vinaigrette
- ½ cup Brennen Gourmet pepper jelly
- 1 tbsp honey
Directions
- Prepare the orange gremolata by combining the minced garlic, minced Italian parsley, orange zest, and salt in a small bowl; set aside.
- For the sauce, blend with a blender the Bella Sun Luci California Vinaigrette, pepper jelly, and honey until smooth and set aside.
- Season the chicken breasts with salt and pepper, then dredge in flour, dip in the beaten eggs, and coat evenly with panko breadcrumbs.
- Heat an oven-safe stainless-steel pan over medium-high heat, add 3 tablespoons olive oil, and, when hot, add the chicken.
- Brown on one side, turn, and brown the other, then transfer the pan to the oven at 400 degrees.
- Cook, turning once or twice during baking, until the chicken is fully cooked through, about 10-15 minutes.
- Remove from the oven and allow the chicken to rest briefly.
- To serve, spoon approximately 2 tablespoons of the sauce onto each plate, place the chicken over the sauce, and generously garnish with orange gremolata
