Ingredients

Chicken

  • 4 chicken breasts
  • Salt & pepper
  • Flour (for dredging)
  • 3 eggs, beaten
  • Panko breadcrumbs
  • 3 tbsp olive oil (for pan-frying)

Orange Gremolata

  • 1 tbsp garlic, minced
  • 1 tbsp Italian parsley, finely chopped
  • 1 tbsp orange zest
  • ¼ tsp salt

California Orange Pepper Sauce

  • ½ cup Bella Sun Luci California Vinaigrette
  • ½ cup Brennen Gourmet pepper jelly
  • 1 tbsp honey

Directions

  1. Prepare the orange gremolata by combining the minced garlic, minced Italian parsley, orange zest, and salt in a small bowl; set aside.
  2. For the sauce, blend with a blender the Bella Sun Luci California Vinaigrette, pepper jelly, and honey until smooth and set aside.
  3. Season the chicken breasts with salt and pepper, then dredge in flour, dip in the beaten eggs, and coat evenly with panko breadcrumbs.
  4. Heat an oven-safe stainless-steel pan over medium-high heat, add 3 tablespoons olive oil, and, when hot, add the chicken.
  5. Brown on one side, turn, and brown the other, then transfer the pan to the oven at 400 degrees.
  6. Cook, turning once or twice during baking, until the chicken is fully cooked through, about 10-15 minutes.
  7. Remove from the oven and allow the chicken to rest briefly.
  8. To serve, spoon approximately 2 tablespoons of the sauce onto each plate, place the chicken over the sauce, and generously garnish with orange gremolata
