Ingredients
- 1 Large Head Cauliflower
- 4-5 tbsp Bella Sun Luci Sun-Dried Tomato Tuscan Rub
- Bella Sun Luci Extra Virgin Olive Oil
- 2 tbsp Olive Oil from the Jar
- Salt & Pepper
- ½ cup Bella Sun Luci Julienne-Cut Sun-Dried Tomatoes in Olive Oil
- 1 Small Garlic Clove
- 2 tbsp Lemon Juice
- 2 tbsp Water
- 1 tbsp Tomato Paste
- 2 tbsp Greek Yogurt
- 1 tbsp Parmesan cheese
Directions
- Preheat oven to 425 degrees Fahrenheit.
- Remove the leaves and trim the stem of the cauliflower.
- Slice the cauliflower vertically into 1-inch "steaks".
- Drizzle 2 tbsp olive oil on each cauliflower steak.
- Season each steak with Bella Sun Luci Tuscan Rub.
- Add salt and pepper.
- Place cauliflower steaks on a baking sheet lined with parchment paper.
- Bake in the oven for 10 minutes.
- Flip halfway through and bake for another 10 minutes.
- In a food processor, combine sun-dried tomatoes, garlic, 2 tbsp olive oil, lemon juice, tomato paste, Greek yougurt, Parmesan cheese, and salt & pepper.
- Blend until smooth. Add water until the sauce is your desired texture.
- Adjust the sauce with salt, lemon, or pepper flakes to make it your own!
- Add sauce to the plate of each serving.
- Place a cauliflower steak on top of the sun-dried tomato sauce.
